Dal Makhni
Dal Makhni is a classic North Indian dish made with slow-cooked whole black lentils and red kidney beans simmered in butter, cream and aromatic spices. Rich, creamy and deeply flavorful, it is a comforting delicacy best enjoyed with naan, roti or steamed rice.
Ingredients:
- Whole black lentils (sabut urad)
- Red kidney beans (rajma)
- Onion (finely chopped)
- Tomato puree
- Ginger-garlic paste
- Green chilli (slit)
- Butter
- Fresh cream
- Cumin seeds
- Red chilli powder
- Turmeric powder
- Garam masala
- Kasuri methi (dried fenugreek leaves)
- Salt (to taste)
- Water
- Fresh coriander (for garnish)
Recipe:
- Soak whole black lentils and kidney beans overnight.
- Pressure cook them with salt until soft and well cooked.
- Heat butter in a pan and sauté cumin seeds and onions.
- Add ginger-garlic paste and cook until aromatic.
- Stir in tomato puree, spices and cook till oil separates.
- Add cooked lentils with water and simmer on low heat.
- Mix in cream and crushed kasuri methi.
- Slow-cook until thick, rich and creamy.
- Garnish with cream and coriander and serve hot.
