Kadhi Pakoda

Kadhi Pakoda is a comforting North Indian dish made with a tangy yogurt–gram flour curry simmered with soft fried pakoras and aromatic spices. Light, flavorful and soul-satisfying, it pairs perfectly with steamed rice for a classic homestyle meal.

Ingredients:

  • Gram flour (besan)
  • Onion (finely sliced)
  • Green chilli (finely chopped)
  • Ajwain (carom seeds)
  • Red chilli powder
  • Salt (to taste)
  • Water
  • Oil (for frying)
  • Yogurt (curd)
  • Gram flour (besan)
  • Turmeric powder
  • Red chilli powder
  • Salt (to taste)
  • Water
  • Oil or ghee
  • Mustard seeds
  • Cumin seeds
  • Dry red chillies
  • Curry leaves
  • Asafoetida (hing)

Recipe:

  • Mix besan, onion, spices and water to make a thick pakora batter.
  • Deep fry small pakoras until golden and crisp, then set aside.
  • Whisk yogurt, besan, turmeric, salt and water until smooth.
  • Cook the kadhi mixture on medium heat, stirring continuously.
  • Simmer until the kadhi thickens and turns glossy.
  • Add fried pakoras to the simmering kadhi.
  • Heat oil or ghee and prepare tempering with spices and curry leaves.
  • Pour the hot tempering over kadhi and mix gently.
  • Serve hot with steamed rice or roti.
