Kadhi Pakoda
Kadhi Pakoda is a comforting North Indian dish made with a tangy yogurt–gram flour curry simmered with soft fried pakoras and aromatic spices. Light, flavorful and soul-satisfying, it pairs perfectly with steamed rice for a classic homestyle meal.
Ingredients:
- Gram flour (besan)
- Onion (finely sliced)
- Green chilli (finely chopped)
- Ajwain (carom seeds)
- Red chilli powder
- Salt (to taste)
- Water
- Oil (for frying)
- Yogurt (curd)
- Gram flour (besan)
- Turmeric powder
- Red chilli powder
- Salt (to taste)
- Water
- Oil or ghee
- Mustard seeds
- Cumin seeds
- Dry red chillies
- Curry leaves
- Asafoetida (hing)
Recipe:
- Mix besan, onion, spices and water to make a thick pakora batter.
- Deep fry small pakoras until golden and crisp, then set aside.
- Whisk yogurt, besan, turmeric, salt and water until smooth.
- Cook the kadhi mixture on medium heat, stirring continuously.
- Simmer until the kadhi thickens and turns glossy.
- Add fried pakoras to the simmering kadhi.
- Heat oil or ghee and prepare tempering with spices and curry leaves.
- Pour the hot tempering over kadhi and mix gently.
- Serve hot with steamed rice or roti.
