Authentic Rajasthani Gatte ki Sabzi

Ingredients
- 2 cups AgroPure premium besan
- 2 tbsp Curd (Yogurt)
- 2 tbsp Oil or Ghee
- ½ tsp Turmeric Powder
- 1 tsp Red Chilli Powder
- 1 tsp Coriander Powder
- ½ tsp Carom Seeds (Ajwain)
- Salt to taste
- Water as required
- 1 tsp Cumin Seeds
- A pinch of Asafoetida (Hing)
- 1 tsp Ginger-Garlic Paste
- ½ tsp Garam Masala
- Fresh Coriander Leaves for garnish

Preparation
Step 1: In a bowl, combine AgroPure Besan, curd, oil, turmeric, red chilli powder, coriander powder, ajwain and salt. Knead into a firm dough using a little water if required.
Step 2: Divide the dough into long cylindrical rolls and boil them in hot water for 8–10 minutes. Once cooked, allow them to cool slightly and cut them into bite-sized pieces.
Step 3: Whisk together curd, AgroPure Besan, water, turmeric, red chilli powder, coriander powder and salt until smooth and lump-free.
Step 4: Heat oil or ghee in a pan. Add cumin seeds and hing. Saute the ginger-garlic paste until aromatic.
Step 5: Pour in the prepared yogurt mixture and cook on medium heat while stirring continuously. Let the gravy simmer for 10–15 minutes until it thickens.
Step 6: Add the boiled gatte pieces to the gravy and simmer for another 8–10 minutes. Finish with garam masala and garnish with fresh coriander leaves. Serve hot with chapati, bajra roti or steamed rice.
